Tofu cream cheese (Vegan Recipe)

Since I’ve become a vegan, despite the fact the I feel more refreshed and happier, I realize something – I become more creative! Every time when I come across some food that I am really craving for, I will type “Food + vegan version” and I can always find the creative recipes! A plant-based diet is actually a journey that I feel like I will never get bored because I can always explore new combinations! Today, it’s time for one of my favorite – Tofu Cream Cheese!

First thing first, why you want to replace traditional cream cheese?

Regular cream cheese has a fair amount of fat even for a pretty moderate serving. Per 100g cream cheese, it’s 342 calories. With the fact that cream cheese also doesn’t provide a significant amount of any good-for-you nutrients, they are mostly considered as empty calories.

It’s true that we can choose the fat-free cream cheese, but instead, many different preservatives are added to replace the fat. which is not good either.

So it’s always worthy to make your own cream cheese. After all, we are all we eat!

Ingredients for Tofu Cream Cheese

  • 1 lb Firm Tofu
  • 2 tbsp Nutritional Yeast
  • 2 tbsp Red Wine vinegar
  • 1 tbsp Lemon juice
  • 3/4 tbsp salt
  • A moderate amount of garlic chives
  • 1/2 tbsp onion powder

How to use this tofu cream cheese?

Basically everywhere!

  • Bagel and other kinds of bread
  • Taco
  • Ricotta
  • Mozzarella on pizza (drizzle this on top instead)
  • Cheddar or Jack cheese in quesadillas
  • Veggie Dip

What are the nutrients of the Tofu Cream Cheese?

Tofu: Made from soybean curds. It is naturally gluten-free and low in calories. Tofu is high in protein and contains all of the essential amino acids. This is one of the best staples for vegans.

Nutrient Yeast: Often use in vegan cooking, it is a popular vegan-friendly source of complete protein, B vitamins, and trace minerals required for optimal health.

Red Wine Vinegar: Made by fermenting red wine, Red wine vinegar can lower blood sugar, blood pressure, as well as cholesterol. Another big plus is it can boast a number of antioxidants as it’s derived from red wine!

Substitute of Red wine Vinegar:

  • White Wine Vinegar
  • Apple Cider Vinegar
  • Sherry Vinegar
  • Rice Wine Vinegar
  • Champagne Vinegar
  • Lemon Juice

How long it keeps in the refrigerator?

This should keep perfectly for 5-7 days in the fridge before the flavour starts to change.

Ingredients
  

  • 1 lb Firm Tofu
  • 2 tbsp Nutritional Yeast
  • 2 tbsp Red Wine vinegar
  • 1 tbsp Lemon juice
  • 3/4 tbsp salt
  • Moderate amount garlic chives
  • 1/2 tbsp onion powder

Instructions
 

  • Put tofu, nutritional yeast, red wine vinegar, lemon juice, salt and onion powder into the food processor and blend it until smooth
  • Chop some garlic chives to give it a richer flavour if needed (optional)
